Tahini ice cream is another way to spice up your tahini pastes. Tahini makes your ice cream creamier and richer in flavour. This would fit for people who have sweet tooth out and, at the same time, tahini fans out there!

Caramel Tahini Ice Cream

Ingredients:

For the ice cream

  •         2 cups heavy cream
  •         2 large egg yolks
  •         1 tbsp vanilla extract
  •         1 cup whole milk
  •         ½ cup tahini
  •         ½ cup honey

For the honey caramel filling

  •         1/8 tsp salt
  •         ¼ heavy cream
  •         ½ tsp vanilla extract
  •         ¾ cup honey
  •         1 tbsp unsalted butter

Procedure:

Tahini Ice cream

  1.       In a pan, heat up tahini and honey over the stove in medium heat. Cook for 5 minutes until you can see bubbles or boiling. And add milk and cream and simmer together.
  2.       While waiting for it to boil, separately whisk the egg yolks in a bowl (1 egg yolk = 1 bowl). Once the mixture is slightly boiling, reduce the heat. About ½ cup of the mixture, slowly add it to the egg yolk while constantly whisking them.
  3.       Once dan, put the mixture with egg back to the pan and heat up again, stir constantly until it becomes thick.
  4.       After, but the ice cream mixture in a bowl and place the bowl in a very cold water. Once it’s a bit colder, you can put it inside the fridge to chill completely. Once chilled, mix in the vanilla extract.
  5.       Transfer in an airtight container and chill again inside the fridge.

Honey caramel syrup

  1.       In a saucepan combine honey and cream over a medium-high heat. Stir frequently until the mixture reaches 238F, using a candy thermometer.
  2.       Time to remove from the stove. Add in the salt, unsalted butter, and vanilla extract. Stir thoroughly until completely mixed and let it cool down.
  3.       Caramel syrup becomes too thick once cooled down. You can melt it again by putting it in a microwave oven. Stir every 10 seconds until you achieve the consistency you like for your caramel syrup.
  4.       In a small bowl, scoop some tahini ice cream and drizzle with caramel syrup. And give yourself a sweet and healthy treat!
