What you need:
1 cup all-purpose flour
1/3 cup powdered sugar
1/3 cup tahini
1/4 cup room temperature unsalted butter
1/2 teaspoon salt
2 tablespoons black sesame seeds
1/2 cup toasted pine nuts
2 tablespoons demerara sugar
- Prepare the oven by preheating it to 350°. In a food processor, pour the 1 cup all purpose flour, 1/3 cup powdered sugar, 1/4 cup unsalted butter, 1/3 cup tahini, 1/2 cup toasted pine nuts and 1/2 teaspoon salt. Pulse the ingredients until it forms a ball around the food processor’s blade.
- In a small bowl, pour demerara sugar and 2 tablespoons of black sesame seeds. Mix the two ingredients. Then, form your cookie dough into small balls. And then roll the dough balls unto your demerara sugar and sesame seeds mixture.
- Spread parchment on a baking sheet. Place the sesame covered dough balls, and flatten them. Place the baking sheet onto your oven, and bake for at least 25 minutes.
