1 cup – tahini
2 ½ cups– cake flour
1 cup – caster sugar
¼ cup – brandy or cognac
1 tbsp – ground cinnamon
¼ tsp – ground cloves
2 tsp. – baking powder
Zest and juice – one orange
Additional ground cinnamon and icing sugar
Preheat oven to 180°C.
Grease and line a baking sheet of about 20 cm.
Mix tahini and caster sugar using a stand mixer.
Beat the mixture until it becomes fluffy.
Add the zest and juice of the orange and brandy or cognac for a minute until it’s well-mixed.
Then add flour, baking powder, and spices.
Fold the mixture gently until it’s well-mixed.
Fill the baking sheet with the mixture and cook for 45 minutes.
To make sure the cake’s ready, you can insert a toothpick. If it comes clean, it’s ready.
Let it cool for 10 minutes before removing it in the baking pan.
Transfer it to a plate and let it cool completely.
Garnish it with icing sugar and ground cinnamon.
